Today, I plan to make spaghetti and meatballs. I enjoy this meal because it is easy to sneak extra veggies into. I use a mixture of beef and pork and finely chop onion, bell peppers, garlic and believe it or not a carrot and celery stalk. I also use an egg and bread crumbs as a binder and garlic salt, oregano and black pepper to season. If you do not have a food chopper, invest in one because it will save you lots of time. I usually use jar sauce but I like to add a bay leaf, oregano, can of diced tomatoes, chopped mushrooms and finely chopped onions, peppers and garlic. I serve a vegetable on the side as well. When I serve this dish I cannot help but giggle to myself because my husband and son have no idea what they are eating and always go back for seconds. Whatever colored speckles of veggies that can be traced will be camouflaged by the sauce. I also always have enough sauce leftover to make a pizza later during the week.
